Sangiovese is arguably the signature grape of Italy, which is unsurprising, since its name translates as “blood of god,” a sure clue to its importance. Chianti – the most well-known wine of Tuscany – is built on a foundation of Sangiovese… always has been and always will be. But as stable and fundamental as it is, Sangiovese is a highly mutateable grape that tastes dramatically different from place to place and grape to grape – from Brunello to Morellino, for example, two sub-varieties of Sangiovese.
