SET UP
- Chill the whites and set the reds out on the counter
- Put tablecloths on the tables
- Set up napkin and fork (and knife if needed)
- Set up wine glass, water glass, and spit glass
- Fold and display menus
- Put out pens
- Fill up water pitchers for the tables and half fill each water glass
- Slice bread and put out in small bowl
FOOD
- Prepare one or two large plates of canapes, two or three canapes per person
- Set up cheese plates
- Soft mild cheese at noon
- Hard sharp cheese at three o’clock
- Blue pungent cheese at six o’clock
- Olives at nine o’clock
- Put cheese plates out
CLEAN UP and CLOSE
